Rasa BROWKAT dari perpaduan brownies & avocado mousse + chocolate ganache, rasanya super duper mewah... lumer dimana2. Topping kacang jg memberikan sensasi ngemil kacang yg "nagih" ditengah nuansa yg serba lumer... mantabs 😋👌

Resep brownies aslinya dari resep tintin rayner yg sdh saya sederhanakan ukuran bahan2nya & cocok dng selera anak2, suka bgt mereka... baru matang sdh hilang 1 pinggan diserbu anak2 😅. Harap maklum & jgn heran kalo foto browniesnya 3 cuma jadi 2 browkat 😃😂.

Untuk resep BROWKAT alias brownies alpukat, saya browsing2 sampe akhirnya saya dapat ide dari avocado mousse cake, jadi si brownies sebagai cakenya. Resep aslinya (resep avocado mousse cake) dari blog rachmawaty luthfie tapi sdh saya sederhanakan ukuran & bahannya (ga pake gelatin). Avocado dijadikan mousse (tdk cuma jus) supaya browniesnya tdk becek.

Waktu : 120 menit
(Resep untuk 20 porsi)

Bahan Brownies :
2 butir telur ayam utuh
1 butir kuning telur ayam
100 gr gula pasir
100 gr margarin
120 gr DCC /coklat blok, dipotong kecil
100 gr tepung terigu
1 sdm tepung maizena
2 sdm susu coklat bubuk
2 sdm coklat bubuk

Bahan Avocado Mousse :
1 buah alpukat besar yg matang sempurna spy tdk pahit (250gr daging buah alpukat)
2 sdm gula pasir
50 ml susu cair
250 ml air dingin yg hampir beku
150 gr whipping cream bubuk
3-5 tetes pewarna hijau

Bahan Chocolate Ganache :
5 sdm whipping cream (ambil dari whipping cream bahan mousse)
50 gr DCC /coklat blok suhu ruangan/tdk dingin, dipotong kecil
1 sdt margarin
Topping secukupnya kacang mente, dicincang kasar

Langkah :
1. Brownies: lelehkan margarin & DCC. Di wadah lain, campur semua bahan kering: tepung terigu, maizena, coklat bubuk & susu coklat. Di mangkok besar, campur gula & telur pakai whisk hingga gula larut. Lalu masukan campuran bahan kering, aduk rata dng spatula. Lalu masukan campuran coklat+margarin, aduk rata. Tuang ke wadah untuk memanggang. Panggang di suhu 180°c selama 25 menit. Setelah matang, keluarkan brownies dari oven & biarkan dingin suhu ruang.


2. Avocado mousse: campur whipping cream bubuk & air dingin, aduk cepat dng whisk hingga mengembang & kaku. Ambil/pisahkan 5 sdm untuk bahan ganache. Lalu simpan semua whipping cream di kulkas spy tetap dingin (bukan dibekukan). Jus/blender: alpukat, susu & gula. Lalu campur whipping cream, jus alpukat & pewarna hijau, aduk rata dengan sendok/spatula. Simpan di kulkas spy tetap dingin (bukan dibekukan/di freezer).


3. Chocolate ganache: masukan whipping cream ke panci, masak cukup hingga tepiannya saja yg mendidih. Matikan api, masukan margarin & DCC, aduk rata bertahap (aduk lalu diamkan sesaat, aduk lg spt itu berulang) hingga tercampur rata sampai membentuk selai coklat.


4. Browkat: siapkan brownies, avocado mousse, chocolate ganache & kacang. Susun berlapis dng urutan dari paling bawah: brownies, mousse, ganache & paling atas /terakhir taburan kacang. BROWKAT siap disantap hap.. hap.. hap... 😋👌. Kalo tdk langsung disantap, jangan lupa simpan di kulkas ya...


5. Tips/trik: untuk aduk whip cream spy cepat & ga cape krn pake whisk, bagi 2 tahap. 1/2 bagian air+setengah bubuk whip cream. Whipcream yg sdh jadi disimpan di kulkas. Lalu aduk lg bahan sisanya. Jangan lupa pake air yg benar2 dingin/hampir beku.


6. Enak bgt 😋😍... lebih enak & gampang potongnya kalo dingin. Udah 2 hari di kulkas pun masih enaaak 😋😋😋
