Chocolate Cake / Spongecake Coklat

Ini hasil yg sy cari selama ini dlm membuat spongecake utk basic cake. Sangat rekomen utk birthday cake. Kombinasi cake n creamnya pas n tekstur cake lembut

Bahan-bahan :
3 butir telur utuh
3 butir kuning telur
75 gr gula pasir
1 sdt Sp
38 gr tepung terigu
15 gr coklat bubuk
12 gr maizena
1/4 sdt baking powder
63 gr mentega
25 gr dcc

Bahan utk cream dan ganache :
200 gr whipcream cair
250 gr dcc

Langkah :
1. Lelehkan mentega bersama dcc (yg telah di potong kecil2), aduk2 sampai coklat larut juga, sisihkan biar dingin

2. Kocok telur, gula, SP sampai mengembang dan pucat, lalu masukkan bahan kering yg sdh diayak menjadi satu (tp terigu, maizena, coklat bubuk, dan baking powder) secara bertahap. Aduk menggunakan teknik aduk balik. Lanjutkan dgn memasukkan mentega coklat leleh yg sdh dingin secara bertahap, masih dg aduk balik sampai tercampur.

3. Masukkan adonan pada loyang round (saya pakai diameter 16cm) yg sdh dialasi kertas roti. Hentak2an agar tdk ada gelembung. Panggang selama krg lbh 25 menit (saya 160dc tergantung oven masing2).

4. Utk cream dan ganache. Potong2 dcc smpai jadi butiram kecil utk memudahkannya larut dlm whipcream. Panaskan whipcream dg api kecil sambil diaduk2. Setelah mendidih lsg matikan api dan masukkan dcc, aduk2 menggunakan whisk. Dinginkan ganache sampai suhu ruang. Bisa dimasukkan chiller. Ketika sdh suhu ruang saya ambil 2/3 utk dijadikan cream olesan. Sisanya sisihkan utk ganache topping

5. Kocok 2/3 bagian ganache td dg mixer kecepatan tinggi sampai mengembang.

6. Setelah spongecake matang dan dingin bagi menjadi 3 bagian utk layer. Oleskan cream pada tiap layer dan tutup semua bagian. Terakhir masukkan ganache pd piping bag lalu semprotkan perlahan2 pada bagian pinggir cake kemudian baru bagian tengahnya. Kalo ganache sebelum dipakai mengeras bs di panaskan diatas air mendidih sebentar saja smp tekturnya kembali.

7. Cake ini menurut sy teksturnya pas. Lembut n tdk seret. Cream nya juga pas kalo di combine dg cakenya. Enakk. Selamat mencoba
