Regal Choco Butter Pudding

Dari dulu emang paling suka dengan puding regal, rasanya legit & ada tekstur lembut dari biskuitnya.
Biasanya cuma bikin 2 layer aja. Antara coklat atau susu.
Tapi ini dibikin 3 layer yg kelihatan lebih cantik.
Resep adaptasi dari Tintin Rayner dengan beberapa penyesuaian, terutama di takaran gula.
Di lidah saya resep sebelumnya agak kemanisan jadi jumlah gulanya dikurangi aja.
Jumlah kuning telur juga dikurangi, soalnya saya nggak tahan kalau masih tercium aroma telur.
Rasa pastinya tetap enak, penampilannya pun tetep cantik.
Dijamin bikin ketagihan apalagi kalau musim panas begini, dimakan dingin2 disiram vla vanilla... yummm.

Bahannya juga gak sulit, bisa ketemu di setiap minimarket.
Mulai bikin yuk. 😉


Bahan-bahan :
24 cm Bundt Pan diameter
Sauce pan

Lapisan Bening :
650 ml air
1 bungkus agar2 putih (7 gram)
4 sdm gula pasir
1/4 sdt vanili Bubuk
1 bungkus biskuit Marie Regal

Lapisan Butter :
500 ml air
1 bungkus agar2 putih (7 gram)
100 gram unsalted butter (saya pakai anchor, tapi kalo gak ada boleh juga pakai margarine)
1 sdt vanilla paste
1/2 sdt garam
4 sdm gula pasir (kalau gak terlalu suka manis bisa pakai 3 sendok aja)
3 kuning telur
180 ml susu kental manis (1/2 kaleng)

Lapisan Coklat :
650 ml air
1 bks agar2 coklat atau putih
3 sdm coklat bubuk
50 gram dark chocolate
4 sdm gula pasir
1 sdt vanilla paste
1/4 sdt garam

Bahan Vla :
2 bks My Vla warna putih (mau coklat juga boleh)
400 ml air
1/2 sdt vanilla paste

Langkah :
1. Susun Biskuit Regal didalam loyang dengan posisi berjajar/melingkar (tergantung bentuk loyang)

2. Siapkan sauce pan, tuang air, gula, vanili bubuk & agar2 bubuk. Aduk rata & panaskan diatas api sedang sambil diaduk hingga mendidih.

3. Tuang lapisan bening perlahan kedalam loyang menggunakan sendok sayur sambil disiram biskuitnya. Sisihkan & tunggu sampai agak mengeras.

4. Sambil menunggu lapisan pertama mengeras, siapkan semua bahan lapisan butter.

5. Masukkan air, garam, gula, vanilla paste kedalam panci. Aduk kuning telur dengan susu kental manis di wadah lain sampai menyatu. Lalu campur dengan bahan lain di panci. Aduk rata. Panaskan diatas api sedang. Lalu masukkan butter sambil terus diaduk hingga meleleh. Aduk rata sampai mendidih lalu angkat. Jika lapisan pertama mulai mengeras, tuang lapisan butter perlahan lahan dengan bantuan centong sayur. Dinginkan.

6. Masak semua bahan campuran lapisan coklat diatas api sedang sambil diaduk2 hingga coklat meleleh & sampai mendidih. Jika lapisan butter sudah mulai mengeras diatasnya, tuang adonan lapisan coklat diatasnya dengan bantuan centong sayur. Dinginkan.

7. Untuk Vla, semua bahan campur jadi satu, aduk rata & masak hingga mengental & mendidih. Dinginkan.

8. Pudding siap dihidangkan & paling enak yg sudah didinginkan sebelumnya di kulkas.
