Hari ini kedatangan teman neng @wiena26 sama-sama wargi Bogor yg awal dulu kenal malah dari dunia maya (FB) lanjut di @cookpad_id . Bebikinanlah chocolate swissroll resepnya mba @sukmawati_rs soal gulung menggulung saya belom bs secantik punya mba sukmawati 😅 tapi beneran ini endeuus lembut dan moist. Terimakasih resepnya ya mba 😘. Saya modif sedikit dengan menambahkan 1 butir kuning telur dan permukaannya disiram chocolate ganache. Saya pake resep chocolate ganachenya mbasay @fenita dede bikin 1/4 resep cukup buat siramin si bolgul. Terimakasih ya mba 😘, enak deh, bikin cakenya tambah nyoklat 😍😋. Step by step ga bgt lengkap karena seperti biasa bebikinan di recokin bocah 😅.


Bahan-bahan :

70 gr air panas

25 gr coklat bubuk kualitas baik

20 gr gula pasir berbutir halus

5 kuning telur (resep asli 4)

15 gr gula pasir berbutir halus

4 putih telur

50 gr gula pasir berbutir halus

50 gr tepung terigu protein rendah

50 gr minyak sayur


Filling : secukupnya whippcream/buttercream dan parutan keju


Chocolate ganache untuk glaze :

75 gr dark cooking chocolate, cincang halus/sisir halus

80 ml susu UHT (resep asli 50 sesuaikan aja kekentalannya ya)

25 gr whippcream bubuk

➡ini takaran 1/4 resep


Langkah :

1. Aduk coklat bubuk, 20 gr gula pasir dan air panas sampai rata seperti pasta, sisihkan. Lalu panaskan oven di suhu 180 dercel.

2. Kocok rata kuning telur dan 15 gr gula pasir menggunakan whisk sampai gula larut dan adonan agak pucat. Kemudian masukan adonan coklat tadi dan juga minyak sayur aduk rata. Lalu masukan tepung terigu 2 tahap sambil diayak, aduk balik menggunakan spatula, aduk sampai rata. Sisihkan.

3. Kocok putih telur menggunakan mixer sampai berbusa, lalu masukan 50 gr gula pasir bertahap, Kocok sampai kaku (jika wadah dibalik telur tidak tumpah). Lalu masukan kocokan putih telur bertahap ke dalam adonan coklat tadi. Aduk balik menggunakan spatula sampai merata. Lalu tuang ke dalam loyang yg sudah dioles margarine dan dialas baking paper (saya pake loyang 24cmx24cmx4cm). Hentak 2x. Lalu panggang dalam oven sampai matang (tes tusuk).



4. Setelah matang, dinginkan dahulu. Setelah dingin oles dengan whippcream/buttercream. Beri parutan keju diujung sisinya. Lalu gulung perlahan sambil dipadatkan. Taruh diatas coolling rak dengan alas dibawahnya karena akan disiram chocolate ganache.



5. Cara membuat chocolate ganache : tuang susu UHT kedalam panci, nyalakan api kecil. Saat pinggirannya mulai berbuih matikan api lalu masukan whipcream bubuk aduk rata. Kemudian masukan DCC, aduk terus sampai seluruh DCC meleleh dan rata. Chocolate ganache siap digunakan. (Kekentalannya bisa di sesuaikan selera ya. Kalau mau agak cair bisa ditambah susunya). Siram merata diseluruh permukaan bolu gulung tadi. Lalu masukan kedalam kulkas supaya set.
