CHOCOLATE BABKA

Babka berawal dari komunitas Yahudi di Polandia dan Ukraina, yang namanya berarti "nenek". Dinamakan demikian karena bentuk asli babka adalah kepangan yang melebar mirip rok nenek-nenek di komunitas itu pada masanya. Ciri khas babka adalah adonannya didiamkan semalaman di kulkas sebelum diberi isian dan proofing sekali lagi. Lumayan lama prosesnya. Sabar dan telaten adalah koentji.

(Untuk 1 loyang)


ADONAN ROTI :

270 gr tepung terigu serbaguna

50 gr gula pasir

5 gr ragi instan

2 btr telur

60 ml air

1/2 sdt garam

75 gr butter, suhu ruang

Sedikit minyak untuk mengolesi loyang


FILLING :

25 gr icing sugar, 15 gr bubuk cokelat, 65 gr dark cooking chocolate leleh, 60 gr butter leleh, 60 gr almond / pistachio / cokelat cincang


SUGAR SYRUP :

60 ml air, 50 gr gula pasir


Cara Membuat :

1. Dalam wadah, campur tepung, gula, ragi, telur, dan air. Uleni sebentar. Tambahkan garam dan butter. Uleni hingga kalis dan elastis. Bulatkan adonan.

2. Olesi wadah mengulen dengan sedikit minyak. Letakkan adonan pada wadah. Tutup dan simpan di dalam kulkas semalaman (8 jam).

3. Buat filling. Campur semua bahan hingga merata. Sisihkan.

4. Keluarkan adonan dari kulkas. Diamkan 10 menit. Gilas tipis berbentuk segiempat dengan menggunakan rolling pin. Beri bahan filling di tengah adonan, hingga batas 2 cm di tiap sisinya.

5. Gulung adonan menyerupai Swiss roll. Iris bagian tengahnya secara vertikal, dengan bagian filling menghadap ke atas. Buat kepang (lih. step-by-step ▶️).

6. Alasi loyang loaf dengan kertas roti. Dengan hati-hati angkat adonan dan letakkan di dalam loyang. Tutup. Diamkan untuk proofing pada suhu ruang selama 60-90 menit hingga adonan mengembang.

7. Panggang dalam oven yang telah dipanaskan 190°C selama 25-30 menit hingga roti matang dan agak kopong ketika diketuk. Matikan oven.

8. Buat sugar syrup. Masak bahan pada panci hingga mendidih dan cukup kental. Matikan api.

9. Ketika babka masih hangat, tuangi sugar syrup hingga meresap. Biarkan hingga betul-betul dingin sebelum dipotong.
